This honey comes from M. ROUYER, beekeeper in Remilly-Allicourt.

Honey is a 100% pure and natural product, which contains no additives or preservatives. In honey, nothing is added, nothing is removed! It is the fruit of a natural alchemy between the nectar of the flowers gathered by the bees and the transformation elaborated within the hive. The bee enriches nectar and honeydew with biological constituents that are transformed and concentrated to form a unique product, honey, with incredibly rich tastes and properties!

A one-kilo jar of honey represents the equivalent of 200 days' work and 40,000 km travelled by the foraging bee to gather about 800,000 flowers!

The alliance of honey and saffron has been practiced for thousands of years. In Morocco, saffron is used in the composition of grandmother's remedies that treat infants when their first teeth come in, by massaging the gums of babies with a gold ring coated with honey and saffron, a naturally antiseptic and painless lotion. In France, a famous dental syrup adopted this recipe.

This love for saffron makes her culture one of the largest saffron farm in Champagne-Ardenne!
We guarantee you a quality saffron:
- The flowers are picked for the most part at daybreak, when the flower is still closed, so that no residue is incorporated.
- Each flower is delicately opened and with the help of a small curved scissor, the three filaments are cut at their base. We keep only the red part of the filaments.
- The filaments are placed on a sieve to remove any impurities or floral remains.
- The sieve is placed in a thin layer on the cooking plates of our electric dehydrator, designed for this purpose. The saffron must lose 80% of its weight, so it is weighed before and after drying.
- Then, it is weighed thanks to an approved and controlled scale each year, before being stored in the various containers which will be used for its marketing.
